Precious metals are measured in troy ounces (approximately 31.1 grams), not avoirdupois ounces commonly used throughout the US (28.35 grams).
Generally speaking, there are 28.35 grams in one ounce. That's water, of course, so if you want to get super technical, you would have to use the weight of silver on the periodic table. (It's been too long since I messed with this.)
